Whilst Burning Sky is ambitious, they do not wish to grow out of, or beyond the buildings and environment they occupy, choosing instead to invest in the areas that they wish to grow in. Burning Sky was the first craft brewery in the UK to install oak Foudres for ageing beers in and at the end of 2016, completed the restoration of a Grade 2 listed building to expand upon this and our barrel-ageing program. The beginning of 2017 saw the installation of a bespoke coolship in the space – a traditional vessel used for cooling hot wort. This will be used to produce spontaneously fermented beers. Alongside the wild side, they continue to brew consistently excellent hop forward pales and IPAs.
